You should end up with about 3 cups of strawberry puree. No cake mix, no jello in here! The secret to this delicious strawberry cake is the homemade strawberry jam.

Blend in vanilla and strawberry puree. Stop the mixer and add the egg whites, then beat until incorporated. Earlier this week i shared my recipe for small batch cream cheese frosting.

Stir into the batter alternately with the milk. Beat on low speed until mixed, then beat on medium speed for 2 minutes. And of course you can’t forget the homemade cream cheese frosting.

Be sure not to open the oven until it has been at least 15 minutes (preferably longer), otherwise you will risk your cakes deflating when you open the oven door. First, make the reduced strawberry puree. In a separate bowl, combine eggs, strawberry puree, vanilla, strawberry extract, pink coloring (as desired). But i’ll have to say…this cake is hard to beat.

Add cake mix, eggs, milk, and vegetable oil to a mixing bowl. This is filled & topped with the most delicious strawberry buttercream frosting too. Combine cream cheese, ½ cup powdered sugar, vanilla extract, and salt in a large bowl and use an electric mixer to beat together until creamy and smooth.

This small 6 inch strawberry cake for two is made from scratch using fresh strawberries. Then add lemon zest and juice and mix well. Trusting your gut is a very powerful feeling.
